Takaaki Otsuka

Born in 1982 in Japan, Takaaki Otsuka moved from the kitchens of several Tokyo restaurants, where he picked up the basics of Edomae style sushi, to make a gastronomic change by working at Shun-Sai Ya, a kaiseki-style restaurant blending in its cooking philosophy tradition and modernity. In 2004 he moved to London to work as a sushi chef at Nobu, and then he travelled in Europe to discover new culinary destinations.
